Named in honor of our local firefighters, Hook & Lager is a special HINDER favorite—and it’s pouring again for a limited time.
For Hook & Lager, we pull some of our Foundry Water German-style Pilsner directly from the fermentation tank and serve it unfiltered. The result is a traditional kellerbier with a soft, natural haze. It shares Foundry Water’s floral, spicy hop character and elegant malt profile, while the live yeast adds extra flavor, body—and a little B-vitamin goodness—to the glass

A deeply red Czech-style amber lager (polotmavé pivo) brewed with rye and barley malts, with European noble hops complementing rich spicy character. Bold but smooth; complex but drinkable. Na zdraví!
I named this one for my father-in-law, Harold. Harold was a roofer by trade first at Langer Roofing in Milwaukee until he started his own roofing company, Krebs Roofing Inc. He has always been on top of things and a dedicated, hardworking man who enjoys ending many a long day with a cold red lager. His daughters recall him reciting his roofer’s creed, “Red sky in the morning – roofer’s warning, red sky at night – Roofer’s Delight!” Little did we know that works for sailors too! This HINDER has aromas of caramelized malt and roasted grain with a smooth medium to light body and a slightly hoppy finish.

We brew this quaffable blonde ale in the Kölsch tradition, combining a unique strain of European barley with a smattering of noble hops, while carefully controlled warm ale fermentation contributes subtle floral notes to this delicately-balanced German-style ale.

It all began with the love of a good IPA…and then before we knew it, we’ve got ourselves a brewery and the Head HINDER has successfully forked it all (well more than expected) over! Cheers to a dream and a journey worth every penny. Not overly bitter or offensive, rather complex and refreshing, it’s definitely worth pledging an asset or maybe two.
ABV 4.7% • IBU 21
This smooth, slightly sweet amber ale balances malty flavors of caramel and baking bread with crisp Wisconsin-grown hops. Raise a pint to the heroic Tuskegee airmen who fought for the freedom to grab our HINDERS!

We brewed this refreshing ale with barley, wheat, and oat malts, then added a butt-load of fresh raspberries, creating a beautiful berry-red hue and an inviting aroma that perfectly captures the essence of the fruit. Nutty malt flavors harmonize with the berries, culminating in a sweet-yet-refreshing finish. You bet your sweet rASSberry this beer is great!

Enjoy a virtual trip to “Rearo De Janeiro” with every sip of Guava-Voom! This bright, golden, and refreshingly tart Catharina Sour is a
Brazilian-style kettle-soured wheat beer brewed for those who are hip to the call of the tropics. We fermented this beauty with plenty of fresh guava, ensuring every drop is juicy, lightly floral, and softly tropical. It finishes bright and crisp, like a summer day, with a lively, effervescent snap. So get ready for bikini season! Whether you’re working on your tan or your thirst, grab a Guava-Voom and let it all hang out!

A special new yeast strain unlocks all the potential flavor of a BUTT-load of American hops, creating massive aromas of pine, tropical fruit, and citrus peel which are complemented by toasted wheat and oats, with hop bitterness reduced through “hop bursting” for a very mild, lightly sweet finish.
ABV 6.0% • IBU 16
A framboise-inspired fruited Belgian sour brewed with golden raspberries and aged in a neutral oak barrel with Brettanomyces. Bright, tart raspberry is layered with notes of pineapple, citrus peel, subtle earthy funk, and a whisper of oak, creating a beautifully complex yet refreshingly drinkable sour that continues to evolve with every sip.
ABV 4.7% • IBU 28
We brewed this light, crisp smoked ale from 100% oak-smoked malted wheat, delivering a smooth hit of oak smoke and a clean, crackery backbone, all expertly rolled into a dry, refreshing, effervescent beer. The Grätzer style—once known as the “champagne of Poland”—died out in the 90s but has since been revived by American craft brewers. You’re definitely supposed to be here today—so drink some beer and shmoke some wheat.
ABV 5.1% • IBU 18
We brewed this hazy, straw-colored witbier (“white beer”) with wheat, oats, spices, and a classic Celis-style yeast. An initial light sweetness gives way to layered herbal complexity, with an expressive yeast character and subtle spice additions blending seamlessly together above a pillowy-soft body and crisp finish. Enjoy this refreshing beer all summer long in the H.H. HINDER Biergarten! Bottoms up to summer!
ABV 10.0% • IBU 32
For our 8th anniversary, we aged our award-winning Wee Heavy Hinder Scotch ale for three years in a peated bourbon barrel from a craft whiskey distillery. The result is a big, smooth, deeply oaky beer, layered with rich flavors of dark sugar, toffee, bourbon, and just a whisper of earthy peat smoke. A touch of our rASSberry wheat ale brings bright raspberry notes and a refreshing tartness that balances the richness and adds another layer of complexity.
Rich, decadent, fit for a king.
H.H. HINDER Brewing Co. is a locally owned craft brewery and taproom in Waupaca, Wisconsin, built on community, creativity, and a sense of humor that doesn’t take itself too seriously. What began as a lighthearted idea among friends grew into a passion project focused on bringing people together over thoughtfully crafted beer, memorable experiences, and a welcoming small-town atmosphere. Named after two important inspirations—Howard and Harold—the brewery celebrates hard work, friendship, and the joy of sharing a great drink with great company. With over 14 house made brews you are sure to find a flavor you enjoy.
David Oldenburg commutes from Green Bay, WI where he lives with his wife, dog and two young boys. David started as an interim brewer but he loves it at HINDER so much he decided to stay! He has used his award-winning talent and has concocted all the recipes for the HINDERS you are grabbing these days. If you haven’t stopped in lately make sure you do because you’ll REALLY enjoy the brews, even if it didn’t tickle your fancy before.
David comes to us from Titletown Brewing Company where he was hired to muck out the lauter tun in 2004 and worked his way up proving his talent as Brewmaster from 2006 – 2019. David grew Titletown from a 1,000 bbl brewpub to a 5,000 bbl packaging brewery with statewide distribution. He has participated in numerous certified beer judging events between the years of 2007-2015. In 2009, he competed in the Associate Program in Brewing Technology at the World Brewing Academy. David is a national-ranked BJCP beer judge and judges the Great American Beer Festival. You’ll see him in the brewery wearing shorts all year (including an occasional Lederhosen sighting).
David’s beers have won numerous awards over the years; in 2015, he was named Great American Beer Festival Large Brewpub Brewer of the Year!
When David is not brewing and judging, he participates in the Master Brewers Association as a technical presenter and podcast guest. It’s amazing he has time for anything else, but in his free time David also plays the violin in two symphonies, the Manitowoc Symphony and the Weidner Philharmonic. David has a fun, shy humor which is starting to shine through his crazy brewing stories from the past, in naming those HINDER beers and all throughout the “Brewing Lab”. We are enjoying David’s understated, humble approach as Brewmaster and hope you enjoy the palette-pleasing HINDERS he continues to brew up for all to enjoy!
The final Cruise-In Brews-In for the season is Wed., Oct. 14, 4-7 PM. See you there!
